INGREDIENTS
- Canola cooking spray
- 1 spelt tortilla
- 2 slices provolone, preferably organic
- 1/4 cup sliced or diced mango
- Strawberries, for serving
DIRECTIONS
Coat a nonstick frying pan with cooking spray and place over medium-low heat. Place the spelt tortilla in the pan. Add the provolone on the left half of the tortilla.
Once the cheese starts to melt, add the mango on top of the cheese and fold the right half of the tortilla over the top. Heat until the cheese has completely melted, about 1 minute. Remove from the heat. Slice and serve immediately with strawberries for a sweet summery lunch.
