Mango Salsa Salad

Total Time: 10 minutes

Servings: About 6

Ingredients:

5 oz of lettuce/spinach/any green assortment you choose
1 large mango
1/3 cup of red onion
1 1/2 cups of frozen/fresh/canned corn
2 avocados
1 tbsp of fresh cilantro
1 lime
salt and pepper (to taste)

Directions:
1. Gather all ingredients, a cutting board, a knife and a bowl.

2. Next, peel and chop the avocado and mango into cubes. Finely chop red onions and cilantro, and slice the lime in half.

3. Toss all ingredients on top of your fine bed of lettuce (I chose an organic mix of arugula and spinach).

4.  Juice lime as a substitute for dressing, add salt and pepper to taste and voila! Eat up!

This recipe was somewhat inspired by a Caribbean salad found in West Commons. Try out their daily special salads like this one. Also, feel free to make this recipe your own with tomatoes, black beans, grilled chicken, pineapple or crunchy croutons.
