Jefe supposedly refers to a famous surfer who dominated the waves of Ensenada, Baja, Calif., and his famed taco recipe. Whatever you believe about that story (keeping in mind that this truck is in Miami, not Baja), if you’re among the uninitiated, you need to try two things on the menu. One is the Ensenada-style fish taco with beer-battered crispy fish, shaved fresh green cabbage, pico de gallo, crema, and lime. The other is the Double Cheezer Miami-Style (two patties, two slices of American cheese, and extra everything (for free), which means tomato, lettuce, pickle, onion, and Jefes’ "boss sauce").
