The summer is officially here and while we are all rushing out for ice cream let’s be honest we can’t eat like that all season long.  At a recent photo workshop {taught by food photographer Libby Volgyes} I met Shaina Wizov – she’s the bubbly and health conscious voice behind Take A Bite Out Of Boca

I’ve been a fan of her blog for a while, so it was great to finally meet her and get to know the lady behind the blog. She’s a New Jersey native and relocated to Boca Raton in 2011. She quickly  found her niche dishing on the South Florida food scene {but is pretty fabulous cook as well!}  

Shaina is a Pescatarian so she has tons of great seafood recipes on her blog.  I’m always looking for new side dishes and salads to try and she has a great healthy spin on these as well!

Shaina has been kind enough to let me share some of her recipes on CCK {thanks Shaina!}. These are dishes are on the lighter side but full of flavor.

I love that the ingredients are readily available. In these hot months I’m all about no fuss food and these dishes are made in a snap which means more pool time for this busy mom!

STRAWBERRY AND AVOCADO SALAD

I love eating what’s in season, as a matter of fact that’s the smartest way to eat. Strawberries and avocados converge to create the ultimate summer salad. This is great as a side salad but easily can become an entire meal by adding a protein {I think grilled shrimp or scallops would be perfect!}

LEMON RICOTTA PASTA SALAD

In the hot summer months I’m all about cooking fast easy meals because let’s face it who wants to spend any extra time in a hot kitchen? This lemon ricotta pasta salad is perfect for summer eating. The dressing for this dish is simple: ricotta cheese mixed with lemon juice, lemon infused olive oil and a little salt and pepper. You can enjoy it hot or cold so this can easily be packed up and taken to the beach!

PINK POTATO SALAD WITH BEETS & QUINOA 

This isn’t your run of the mill potato salad for starters it’s pink.  How is this salad pink you’re wondering, its from the beets. Beets are pretty much a super-food their filled with antioxidants, help with inflammation, help cleanse your body and are a high source of energy. That’s a lot of power for something pink right?! So get out of your comfort zone, put down the mayo and vinegar base recipes you’re used to and try a healthier version of this summer staple!
