First 'Vegan Butcher' Opens This Month

Kale and Aubry Walch are the brother-sister team responsible for The Herbivorous Butcher, a shop set to open in the next month in Minneapolis. What started as a Kickstarter campaign and a small imitation meat stand will now turn into a restaurant featuring 100 percent vegan entrées.

The Herbivorous Butcher will feature its classic dishes such as wheat, gluten, and tofu-based Pepperoni, Italian Sausage, Smoky House Ribs, Deli Bologna, and Teriyaki Jerky, as well as some specials. The goal of the shop, which was mentioned by the Kickstarter page, is to create flavorful foods that will be agreeable among vegans, vegetarians, and meat-eaters alike. They will also make sure that all of the dishes have similar flavors, textures, and nutrients as meat, without the negative implications that meat consumption has on health, animals, and the environment. The shop anticipates success after the Kale and Aubry Walch gained a loyal following and raised over $61,000 from their online campaign.
