These sweet treats contain, yes, black beans as the main ingredient. But before you scoff at the idea, remember they are terrific, especially considering that they are dairy, oil, and egg free. They are also easy to bake, low in calories, and high in fiber.
- One 15.5-ounce can black beans
- 1 box prepared brownie mix
- Non-stick cooking spray
Preheat oven according to brownie mix directions.
Open and drain a can of black beans, rinse, and strain thoroughly. Refill the can of beans with fresh water. Purée the beans and water in a blender until smooth and creamy. Add the brownie mix in and thoroughly blend the purée with a prepared brownie mix of your choice (no eggs, oil, or other ingredients needed). Place batter in a lightly-greased 8-inch square baking dish. Bake brownies according to package directions. Cool thoroughly and serve.
