A fruit pizza bar is the perfect addition to any brunch, shower or summer holiday. Guests can customize to their palate by selecting their own icing and toppings! This cream cheese icing goes on so smooth and is the perfect base for any fruit. You can substitute the lemon juice for orange {my mom's favorite} or lime! I used lemon for convenience...I almost always have it on hand.
INGREDIENTS
Cream Cheese Icing:
- 8 ounces cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons lemon juice
Buttercream Icing:
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla
- 1/3 cup milk
Fruit Pizzas:
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 3 teaspoons vanilla
- 1 cup sour cream
- 1 teaspoon salt
- 2 teaspoons baking soda
- 6 cups flour
DIRECTIONS
Cream Cheese Icing:
Blend all ingredients together well. Yes, it's that easy! You can substitute orange or lime juice for lemon juice if you prefer!
Buttercream Icing:
In a mixing bowl, cream butter. Beat in sugar and vanilla. Add milk and beat until smooth.
Fruit Pizzas:
In mixer, cream butter and sugar. Add eggs, vanilla and sour cream. In a separate bowl, combine salt, baking soda and flour. Gradually add to mixture. Roll dough into balls, placing on parchment lined cookie sheets. Lightly dust the bottom of a glass and press dough to 1/4". Bake at 375 for 7-8 minutes. Do not be tempted to add time!
