Avocado Pesto Pasta. For pesto lovers, it’s hard to believe that there’s a dairy-free pesto that actually tastes good. Avocado makes it creamy and toasted pine nuts add lots of flavor.

Cauliflower Cashew Soup with Pomegranate Seeds. A creamy and spicy soup to get you through cold fall days. Please note that this recipe is not vegan, but can be easily made so by swapping out honey with agave.

Mushroom Risotto. Use orzo instead of Arborio rice for this Greek take on the classic comfort food dish.

Vegetarian Chili. Packed with tons of tomatoes, two types of beans, and vegetables as far as the eye can see, this chili won’t have anyone asking “Where’s the beef?” A scoop of wheat germ thickens up the soup and add a double dose of fiber and protein.
