We eat pancakes so often that we have to mix it up on weekends. On Saturday mornings I like to try new recipes that are fun, healthy, and will cover Sunday morning, too, because Mama doesn’t cook Sunday morning. In this post I’m going to cover some of our more recent, favorite, new pancake recipes. A couple may sound a little crazy (banana and bacon?), but you will be shocked at how good they actually taste. (By the way, I usually sub extra-lean turkey bacon to keep it healthy.) The train pancakes are a hit with my boy, and the Meyer lemon pancakes are a huge hit with my daughter.
