Certain ingredients seem to be made for each other.  In our opinion, concord grapes and absinthe have an affinity for each other that we love to feature when the grapes are in season. This year’s coupling includes an aperitif called Bonal Quinquina, citrus and London’s finest gin.

  • ½ ounce simple syrup
  • 4 Concord grapes
  • 1 ½ ounces Beefeater gin
  • ¼ ounce Bonal Quinquina
  • ½ ounce fresh lemon juice
  • Ice
  • St. George Absinthe, for rinsing


In a cocktail shaker, muddle the grapes and simple syrup. Add the rest of the ingredients and ice, then shake and strain into a chilled, St. George Absinthe rinsed coupe. Garnish with three concord grapes on a toothpick.

Add another layer of flavor to your cocktails by making your own simple syrup – combine equal parts sugar and water with whatever aromatics you like – fresh herbs, whole spices, citrus, or chile peppers – heat to dissolve sugar and strain before using.
