My students have given me the nickname "Chileman," that's why some of my recipes have Chileman in the title. One of the interesting things with chiles is that by eating hot chile peppers you actually burn calories. So you can have a little bigger brownie knowing that the chile will help you burn off some more calories.

INGREDIENTS

  • ½ cup (one stick) unsalted butter, plus more for the pan
  • 1 cup flour, plus more for the pan
  • ¼ cup cocoa
  • 3 eggs
  • 1 cup firmly packed light brown sugar
  • 1 teaspoon baking powder
  • 1 cup chopped pecans
  • 1 teaspoon vanilla
  • 1 tablespoon Bhut Jolokia chile powder (or 1 tablespoon of Holy Jolokia hot sauce)
     

DIRECTIONS

Preheat the oven to 350 degrees. Butter and flour an 8-inch square baking pan. In a small saucepan, melt butter with cocoa. Beat eggs until foamy, then gradually beat in sugar. Add the cocoa-butter mixture to the egg mixture.

Sift the flour and baking powder, then sift half of it into batter. Mix pecans into the remaining flour; add to the cake batter, stirring to blend well. Add vanilla and Bhut Jolokia chile powder. Pour batter into the prepared pan. Bake for 25-30 minutes or until toothpick comes out clean.
