Blue Cheese, Bacon, Fried Onion Sliders

- 2 Pounds ground sirloin
- 2 Teaspoons salt
- 2 Teaspoons ground black pepper
- 8 slices thick-cut bacon
- 2 large onions, cut into 1/2-inch wide strips
- 8 Teaspoons mayonnaise
- 16 slider buns or 4 regular hamburger buns quartered
- 6 Ounces crumbled blue cheese
Authors Mike DeSimone and Jeff Jenssen of The Fire Island Cookbook got their inspiration for these sliders from the miniature appeal of a White Castle Slider, another burger we love. Their cooking technique is a little different from the fast-food chain’s (they grill theirs), but they more than make up for it by topping them with crispy onion rings and rich blue cheese.
Combine the beef, salt, and pepper and form into sixteen 2-ounce patties. In a large skillet, cook the bacon until crisp. Drain on paper towels. Add the onions to the bacon fat and cook until browned.
Preheat the grill to medium. Grill the burgers for 1½ to 2 minutes per side for medium-rare. Spread ½ teaspoon mayonnaise on the bottom ½ of each bun. Top with a burger, fried onions, crumbled blue cheese, and a ½ slice of bacon. Cover with the top ½ of the bun and secure with a toothpick.
