Blackened Hot and Crispy Wings

Don't be scared of the complexity of this recipe wing lovers — it's all worth it. Be patient with them, and taste slowly, allowing all three features of the wings to mix in your mouth...

Preheat the oven to 400 degrees. Wash and pat dry the wings. On a foil-lined baking sheet or pan, toss the wings with the olive and generously season with the spice blend. Bake for about 40 minutes, turning over once halfway and re-seasoning. Then, turn the broiler on high and toss the wings in a generous amount of hot sauce of your choice. (I used Frank's RedHot.) Cook for another 5 minutes until the wings are blackened, hot and crispy.

Serve with your favorite blue cheese or ranch dressing.
