I know you are going to love this gluten free, egg free pizza crust recipe from Lungomare's Executive Chef Craig because a good gluten free crust is hard to find. Chef Craig has been converting a lot of his recipes to gluten free with his favorite, Cup4Cup gluten free flour. This crust is crispy and keeps the crispiness whether you make a really thin crust, or a thicker crust. Top it anyway you like, with sauce, or as shown with Fontina cheese and vegetables. Ok, I was hooked when I saw this on Top Chef. These are cut into fry shaped wedges and fried lightly in olive oil and the served best with seafood. TC had it with seared scallops but other sites serve it with a filleted fish. I tried to find it on the TC site, but alas, it wasn't listed - only pictured! So I found this on the web and will have to use my friends as guniea pigs (They have it so rough!)once more as I attempt to make these. I have posted the pictures from the site and will post my own when I make these. Enjoy!

Another episode of Top Chef, another beautiful recipe. This is from Hosea and while I didn't agree with his pairing of the mushroom sauce with shrimp, I did like the mushroom sauce. I am thinking this would be an excellent side for chicken or beef and I like the fact it has unique mushrooms as the star attraction. As with most of the recipes they post on the Top Chef website, there are serious omissions such as time and heat settings. I will make this soon, fill in some of the blanks, and post a picture. Enjoy with a glass of red zinfendal!

THIS IS EPIC ON BURGERS/SANDWICHES. YOU MUST MAKE THIS. From the Good Stuff Cookbook by Spike Mendelsohn: In France, they used to make fun of me about my love of Hellmann's, but if you ask me, it's pretty damn good. If you want to go the extra mile, though it doesn't get any more basic than this recipe. This is super simple and the results are amazing. I have used canola and apple cider vinegar in a pinch. Always a great recipe! Makes burgers AMAAAAZZINNG. It is really rich so I don't use much at all. Using less of the homemade stuff rather than a ton of ikky store bought light or non fat mayo... It really makes a difference. I feel like what I am eating is better quality so moderation is my guide.

This is from the Bravo TV show, and it is absolutely divine. I am posting it as is, but I am adding a few notes, based on my experience replicating it 1) Instead of using ramekins, you can bake it all together in a large baking pan 2) Cut some of the butter and brown sugar in the crumb topping. I love sugar/butter, but it was bit too rich. 3) You will probably have some extra crumb topping. 4)If you are missing a lemon, you can substitute with 1 TBL of vinegar (especially malt vinegar) and 1 TBL of orange juice. 1 and 1/2 tsp. of of vanilla extract can substitute the 1/2 vanilla bean 5) The mixer isn't necessary. You can soften the butter in the microwave and mix it by hand. This recipe sounds long, but it is relatively quick, especially if you use store-bought whipped cream.

BEST BURGER SAUCE. No pickles in the sauce. Its tangy and mmmmmmmmmmmm... I got drool on my keyboard. Oh yeah and it's pink. :D From the cookbook The Good Stuff: After reading several books and articles on Americans and the hamburgers they love, my mother found that people's favorite sauces were different takes on Thousand Island dressing (ketchup and mayo). At one of our family tastings, Mike Colletti, a chef I met Le Cirque, and I came up with our twist on it-we locked ourselves in the kitchen and added a little something to the sauce to give it a real kick.
