Toasted Coconut Cream Pie
This creamy, coconut pie from Boston's Flour Bakery and Café was inspired by the dessert menu at Myers + Chang, the bakery owners' pan-Asian restaurant. Joanne Chang, the co-owner and pastry chef of Flour, says that coconut and lime are common Southeast Asian flavors so she made them into this tart topped with whipped cream, which became one of the most popular desserts at the restaurant and a popular holiday pie at Flour. You 'll need a double boiler for this ethereal dessert, because you 'll want the egg custard to cook slowly and beautifully. When the custard is thick and creamy, a sweetened, foamy egg-white mixture is folded in, and then brandy whipped cream is folded into that. This luscious filling is then poured into a pastry shell that has been brushed with apricot glaze, and then the pie is sprinkled with toasted coconut.

Not perfected just yet. Calgary's altitude makes custards challenging, so recipe needs tweaking. I think more corn starch, and 24 hours fridge time. Lots of love goes into it, since the crust is homemade ginger snap cookies! Tastes INCREDIBLE
