This was the only dish my father ever made, but it was so rich tasting, he fooled everyone into thinking he could cook! His trick was a bit of blue cheese in the alfredo sauce. I prefer shrimp in this dish, but chicken would work as well. If you opt for shrimp, use jumbo large shrimp so that they can stand-up against this thick sauce and spinach noodles. This dish is fairly simple with few ingredients... but make sure that your serving dishes, tools and ingredients are prepped beforehand in order to help with fast timing. Shrimp and fresh pasta are easy to over-cook (Or is that just me?).

In this flavorful dish, you can adjust the amounts to suit your personal tastes...I happen to like garlic and Parmesan cheese. If you have any leftovers, you can add a little more milk and heat briefly in the microwave oven.

Thick and Creamy! The sauce is just like the tasty alfredo sauces in italian restaurants. Easy and very well flavored. We enjoy this quite often either with shrimp or chicken. The bits of a plum tomato on top blends well with the creamy sauce and adds flavor. A pretty and wonderful dish!!!

I love my mom, so I wanted to make her something special for mothers day. Went to the local market and saw huge whole gulf shrimp (longer than the length of my hand) and knew what to do. It took me an hour to disassemble four pounds of shrimp, (remember... they were huge) but I had more than enough at the end which is why I'm cutting the amount down for this recipe. prep time will be longer if you are shelling and de-veining your own shrimp.
