After visiting a highly regarded Thai joint last week — and eating the best ribs I’ve ever had — I was beyond excited to learn that we were tackling short ribs for this week's SWAT. The aforementioned dish — bean-paste-marinated pork ribs with sesame seeds and cilantro — inspired me to use Asian flavors for this recipe. We love short ribs and making this Bolognese was amazing.  It was hearty and real paleo comfort food.  All of the groceries are from Shop Rite in E. Hartford/Manchester, CT and it we froze the leftover to enjoy another evening.  You really need to give this recipe a try and enjoy over pasta, spaghetti squash or roasted butternut squash.Enjoy!

Slow-Cooked Short Ribs
These short ribs are great with some glazed carrots or mashed potatoes. The best part is, you won’t need much in the way of special equipment — just a food processor and a fat separator for skimming the fat off the sauce. You will have plenty of the flavorful beef stock left, which would be perfect for later use as a sauce. Or, freeze it until next time you cook your next short rib dish again.
