Zuccotto
According to legend, zuccotto is the first semifreddo (an Italian frozen dessert) in the history of cooking and was originally made in an infantryman's studded helmet. (In the Tuscan dialect, zucca means 'head.') It was originally prepared with ricotta, glacé (candied) fruit, almonds, and dark (semisweet) chocolate.

Prep: 20 minutes; other: 8 hours and 10 minutesThis refreshing lemon version of semifreddo was a hit with our taste-testing panel. It's ideal for entertaining because of the large yield. Garnish each serving with fresh mint leaves and a few fresh berries to make it extraspecial.

A semifreddo is a frozen Italian dessert. This recipe is something like a frozen chocolate mousse, flecked with coarse bits of crumbled cookie. My husband and I learned to make this dessert while on a vacation in Italy. The hosts of our Tuscan villa taught us several recipes, and this frozen dessert is one of my all-time favorites.

Semifreddo, Italian for "half cold," refers to a dessert that's chilled or partially frozen. In this adaptation, traditional Christmas eggnog is transformed from a beverage into a slushy treat you can eat with a spoon. If you don't like rum, substitute vanilla or hazelnut syrup, which you can find with the coffee in most supermarkets.
