I originally got this idea watching Aaron McCargo on the food network. Of course, his were fried and I am trying to watch my weight. After a few attempts, I have come up with this super easy baked version. I figured out the nutrition facts for four servings, including chips, and it comes out to about 295 calories and 10 grams of fat per serving (approximately 2.5 strips).

this is spectacular. i have made it twice for 2 different groups of people and everyone has loved it. each serving(not including any additional toppings) is less than 100 calories. the polenta can be made ahead and refrigerated to save time.

From the World's Healthiest Foods website: I recently started a healthy (almost vegetarian) diet. This is one of the few recipes I've found that has plenty of flavor and is vitamin packed. Don't overcook this soup or the beans and veggies will get mushy!Note: Make sure to finely chop the collard greens or the soup will be quite bitter. I found 1/4" pieces were perfect for my taste.

A healthy mexican casserole dish that is really yummy and easy to make. For an added twist...if you like stuffed peppers, at step 5 stuff mix into 4-5 large bell peppers, add about 1/2 inch of water to the bottom of pan and bake for 30 minutes.Top with additional salsa and shredded cheese! Enjoy!
