I love using panko bread crumbs. I usually fry yellow squash with cornmeal but decided I would try these bread crumbs. They turned out good so I thought I would share my recipe with you. Hope you enjoy!

This is the only squash puff recipe that does not need corn meal which I don't keep in the house. It's also a little sweeter which is good for the little ones! :)

Slice squash, put on plate beat eggs in a separage bowl pour corn meal on another plate. First dip squash in egg, then in corn meal to cover both sides. Cook in hot oil until slightly brown on both sides. Sprinkle with salt to taste.
