Crab and Corn Fritters with Fresh Corn Mayo
Growing up, there was a park on the water outside of Providence, Rhode Island, called Rocky Point, and they used to serve the best clam fritters. When I ate beignets for the first time in New Orleans, I immediately thought of my childhood clam cakes and wondered how I could give beignets a savory turn. This recipe provides a foundation batter that you can vary as you choose; I’ve given you two variations in the box on page 48 to get you started. I particularly like making these with eggplant because it almost melts right into the batter.Excerpted from Essential Emeril: Favorite Recipes and Hard-Won Wisdom From My Life in the Kitchen by Emeril Lagasse. This recipe truly highlights two of summer’s best offerings: corn and tomatoes.  For best results, never refrigerate your tomatoes - the cold will ruin both their flavor and texture. Rioja Pairing: The bright acid from the tomatoes and lime juice in this dish would pair well with an unoaked white Rioja. White Riojas that undergo stainless-steel fermentation but have no oak contact tend to be bright and refreshing summer quenchers.

For years, this was a recipe I didn't let out of my kitchen — I don't know why, but everybody has one or two recipes like that. I finally relented and gave a copy to Rick Bishop, Milk Bar's favorite strawberry farmer, and he told me he hid it under his kitchen sink, where he knew it would be safe. Tamales
Tamales can take a couple of days to make if you’re using an intricate filling. In this easy recipe, the masa ingredients are all mixed in a bowl and just spread on dried corn husks, making for softer tamales with a shorter prep time. Traditionally, tamales are made with lard, but in this recipe (and in a lot of traditional ones) butter is used instead to bind the ingredients. I’m often asked what the best substitute is for lard or butter when making a tamal. My answer? Make enchiladas instead. Click here to see It Doesn't Get Easier Than Brunch.
