Churrasco is a barbecuing technique from cattle ranches in the south of Brazil. For fiestas not unlike those held on early California ranchos, local cowboys--gauchos--speared big slabs of meat, then drove the tip of the spear or pole into the ground to tilt the meat over an open fire.

Barbecued beef tenderloin with a cilantro, mint leaves, garlic and flat leaf parsley chimichurri - This is so good!! I saw it made on a barbecue special on food network, the recipe is from Steven Reichlen. It is actually very easy to make. It calls for a 5-6" piece of tenderloin that you slice to make little "slabs" but I have just used steaks as well. I had to look up the word churrasco to find out what it was, it is pronounced "shoo ras koo" and means Brazilian barbecue.

This is a simple Ecuadorian steak dish. According to Laylita of www.laylita.com/recipes (where I found the recipe), this is traditionally served with a fried egg, rice, French fries, ripe plantains, a small salad, avocado slices and hot sauce. Posted for ZWT 2008.
