Easy directions for brining a turkey and then roasting it. This is from an article on Thanksgiving found in The Wine Spectator. Turkey always comes out moist and tender. Brined turkeys seem to cook faster than non-brined turkeys. Cooking time includes time for sitting in brine.

Soaking a turkey overnight in a well-seasoned brine before you roast it ensures a moist, flavorful meat, both white and dark. The honey and maple syrup in the brine contribute to a beautifully browned skin. This is well worth the effort. I have tried other brines, but like this one the best for the end result. I would serve this with a nice giblet gravy.
