Bacon, Egg, and Cheese French Toast
Quick: Name two perfect breakfast foods. Bacon, egg, and cheese sandwiches and French toast, you say? So do we. So why not combine the two?  Even though the idea sounds like it might have been hatched late at night in a college dorm room, and we're sure it was at some point in time, we decided to go all-in and see what we could come up with. Thick slices of brioche-style pullman loaf get a soaking in salted eggs and a brown on the griddle, then two slices get filled with thick-sliced bacon and American cheese and finish melting in the oven.  The end result? Say goodbye to those expensive but small frozen breakfast sandwiches. These are over the top. Make them up ahead of time and put them in the freezer. When ready to enjoy, defrost, wrap in paper towel and zap for a minute or two in the microwave. This recipe is for 6 but can easily be doubled to 12. The biscuits can be baked along with the eggs. Enjoy!

Does this sound like a drive-through order? You can make it at home and it's just as good. At least, I think so. One Sunday evening, my husband wanted one of these and I told him I would make him one. So, I made the biscuits, got the egg ready, and grabbed for the cheese. There it was-a Bacon, Egg, and Cheese Biscuit-and we didn't have to go anywhere for it. You can make your own biscuits (see Mimi's Biscuits #210731) or buy the refrigerated ones.

Came up with this when I didn't want a regular breakfast biscuit. Cooking bacon isn't included in cooking time. If you want to save time,and a step or two just mix in the cooked bacon with the eggs before you scramble them. Heat level of salsa is Chef's choice. I wanted something quick and easy for dinner last night. I had cooked some bacon for breakfast and did not use the entire package so I thought this would be a great way to finish it up. It ended up to be a very tasty pie.

Just combined everything to have in a sandwich. To avoid using more butter, I toast the bread right before egg was fully cooked. In doing so, I would add cheese to egg after I flip so it can melt then arrange egg, cheese & bacon inside toast.
