The perfect cheese sauce that completes the ultimate mac 'n' cheese recipe



  • ¼ cup unsalted butter (½ stick)
  • 1/3 cup all-purpose flour 
  • 3 cups milk
  • 14 ounces Beecher’s Flagship Cheese, grated (about 3 ½ cups)
  • 2 ounces Beecher’s Just Jack cheese, grated (½ cup)
  • ½ teaspoon kosher salt
  • ¼ -½ teaspoon chipotle chili powder
  • 1/8 teaspoon garlic powder


Melt the butter in a heavy bottomed saucepan over medium heat and whisk in the flour. Continue whisking and cook for 2 minutes.

Slowly add the milk, whisking constantly. Cook until the sauce thickens, about 10 minutes, stirring frequently. Remove from the heat.

Add the cheese, salt, chili powder, and garlic powder. Stir until the cheese is melted and all the ingredients are incorporated, about 3 minutes. Use immediately or refrigerate for up to 3 days.

Makes about 4 cups

Note: This sauce reheats nicely on the stove in a saucepan over low heat. Stir frequently so the sauce doesn’t scorch.

And by the way there's no such thing as a 'flagship' cheese when NO ONE HAS EVEN HEARD OF YOU...!♔✧♕


Can't wait to try this recipe and excited to see if adding the chipotle powder really makes that much of a difference.

It amazes me how much time people have on their hands to be negative and critical of strangers, when in reality, they probably aren't anywhere near as confrontational in person.


I like to add about 2 tbsp. of grated sweet onion.


I add a chunk of cream cheese to my sauce... heavenly!


Oh my gosh, people, get a life! To make great Mac N Cheese~
Boil one box elbow macaroni with salt added to the water
When done, toss with butter (About 1 stick)
Add 1 cup Sharp Cheddar Cheese to macaroni
Stir with 1/4 to 1/2 cup milk
Cover generously with 1 to 1 1/2 cups more Sharp Cheddar Cheese
Bake for 30 minutes at 350 degrees
If you want to brown the top put under the broiler for the last 5 minutes.
For a one dish meal add ham or weiners cut in small pieces.
This is easy and fool proof. I get raves when I serve this dish!

I assume that it should be Beecher's Flagship Cheese, and not Flagship Cheese Sauce, since the recipe is FOR the sauce.


What are you talking about? This is the recipe to make cheese sauce...not cheese. The title is correct.
