My daughter Sammy never liked taking chicken to school for lunch, but when I put this dish in her thermos (albeit a gluten-free version), she came home and told me I had given her two of her favorite foods in one! I don’t know who was happier — Sammy or her mother who had managed to sneak in some more brain-boosting protein into her daughter’s day! Maybe that’s why she aced the math test!
INGREDIENTS
- One 6-ounce box macaroni and cheese
- 1/4 cup low-fat milk
- 2 tablespoons barbecue sauce
- 6 tablespoons Sneaky Chef White Purée*
- 1/2 cup cooked chicken, diced
DIRECTIONS
Cook the macaroni and cheese according to package directions. Combine the milk, barbecue sauce, and purée with the macaroni and cheese and return to simmer, stirring until well combined. Add in chicken, warm through, and serve.
