INGREDIENTS

  • 3 ripe bananas, peeled
  • 1 egg, beaten
  • 1 1/2 cups skim milk
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • Cooking spray, for greasing (optional)
  • 1 tablespoon brown sugar

DIRECTIONS

Preheat the oven to 375 degrees.

Slice 2 of the bananas and set aside. (You can add these however you like — in with the wet ingredients or arranged in a pattern on the top or bottom of the dish.) Mash the remaining banana and combine with the egg, milk, and vanilla extract in a bowl. Combine the oats, baking powder, and salt together in another bowl, and pour the wet ingredients into the dry ingredients. Mix well.

Line an 8-inch square or round baking pan with parchment paper or coat with cooking spray (you can also use a pie dish). Layer some banana slices on the bottom. Pour the batter into the pan. Top with remaining banana slices. Bake in the oven for about 26 minutes.

Increase heat to broil, sprinkle the oatmeal with the brown sugar and broil for 3-4 minutes. Remove from the oven, and serve.
