A great way to savor summer's seasonal produce. Serve on grilled seafood, poultry, vegetables, steaks, or planks of grilled tofu.

Ingredients

  • 1 cup diced tomato
  • 1 cup diced zucchini
  • ½ cup chopped drained canned artichoke hearts
  • ½ cup chopped fresh basil
  • 1/3 cup diced bottled roasted red bell peppers
  • ¼ cup minced onion
  • 2 tablespoons chopped pitted Kalamata olives
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons olive oil

Directions

Combine all ingredients in a medium bowl; cover and chill.
