It’s that time of year again. As the warm apple cider and cozy sweater season fast approaches, it’s time to pack away the white pants and ring the last-call bell for summer squash. But before you toss your flip-flops to the back of the closet, enjoy a few more dishes filled with summer’s bounty.

As a hint of sweet summer basil wafts through the air and rosy tomatoes are still ripe and plump, gather some of summer’s finest vegetables for an easy casserole dish.
