Aquafaba—the liquid from a can of beans—is taking the world by storm. With it, you can make homemade vegan cheese that slices and melts, eggless mayonnaise, and even egg-free foam for a whiskey sour. Is there anything that this miracle bean juice can’t do? We set out to try five super-simple recipes that use aquafaba. Save that chickpea brine and give them a try!
After whipping together some aquafaba, cream of tartar, vanilla, and sugar for about 15 minutes, we were able to make this seductive whipped cream:
The mixture can also be used as a meringue for a lemon meringue pie.
Just add some melted dark chocolate to it to make this silky chocolate mousse:
Then we thought, “What else can we do with aquafaba?” So we took our favorite chocolate chip cookie recipe and used 3 tablespoonfuls of aquafaba as an egg replacer. This is what we ended up with:
But not everyone has a sweet tooth, so we also tried using it in a vegan mayonnaise recipe.
