For this cookie, Ashley Swider wanted to do something in the spirit of St. Patrick’s Day, yet have the name reflect her positive vibe that’s carried throughout the company, yesUmay. The result? A salty, rich, and flavorful cookie that has a brownie-like consistency.

- 1 ½ cups of butter
- ¾ cup of dark brown sugar
- ¾ cup of sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- ¾ cup of unsweetened cocoa powder
- 2 cups of unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups dark chocolate chips
- 2 cups semi-sweet chocolate chips
- Sea salt, for sprinkling
For the frosting:
- 1/3 cup of Guinness Stout
- 3 ¼ cup of confectioners’ sugar
DIRECTIONS
For the cookies:
