About the Region
The northernmost wine region of Burgundy, Chablis produces its own unique white wines, 100 percent chardonnay (other white grapes are grown in the region, but the wines they yield must be labeled with the generic Bourgogne appellation), and often considered to be a particularly pure expression of that grape's varietal character. The best of the vineyards are designated as grand cru (they are Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos, and Blanchot), and there are another 40 premier cru wines, including Montée de Tonnerre, Montmain, Fourchaume, and Vaillons. The wines are known for good acidity and for a mineral or flinty character called goût de pierre à fusil, or gunflint.
