- 3 pounds Seedless Watermelon, with rind, about 2 pounds without
- 1 tablespoon Fresh Mint, chopped
- juice from half a Lemon
- 2 ounces Feta Cheese, crumbled
- Remove the rind from the watermelon and cut into 1-inch cubes.
- Place in a large bowl and add the mint and lemon juice. Toss to distribute and taste if additional lemon juice is needed.
- Sprinkle the feta on top of the salad and serve.
