Eva Pesantez’s passion for food and natural culinary acumen has been the driving force in her success in the restaurant industry. Currently the Corporate Executive Chef for all Brother Jimmy’s locations, Eva has used her experience, skills, and instinct to elevate the cuisine at the always popular NYC BBQ restaurants.
Eva Pesantez first launched her career in the kitchen of The Cook in Shelter Island, New York, where she later returned to take over as Executive Chef. In between these positions, Eva was the Pastry Cook at the Four Season’s Hotel in Boston, which is home to one of the top five restaurants in the city, Aujord’hui. She then simultaneously held positions as Pastry Cook and Sous Chef at notable Boston restaurant Icarus. After her time in Boston, Eva was ready to be part of the challenging New York City restaurant scene, and took a Sous Chef position at Monkey Bar under former Bouley chef Kurt Gutenbrunner, and later held this position at Drover’s Tap Room as well.
With a solid background and knowledge of culinary business and techniques, Eva’s entrepreneurial spirit led her to launch her own catering business, Savor, in 2005. Sharing a space within the central commissary of Brother Jimmy’s, she quickly realized that the ever-growing chain headed by brother and owner, Josh Lebowitz, needed a hand overseeing the food that was distributed to all Brother Jimmy’s locations.
While overseeing the commissary, Eva took the opportunity to improve the caliber and variety of the food being served at Brother Jimmy’s. It is under her careful eye that the popular watering holes have made the transition to dining destinations. In November 2008, Eva was appointed Corporate Executive Chef. Working alongside her brother, Eva redesigned the Brother Jimmy’s menus, adding lunch specials and a new brunch program. Through the opening of Brother Jimmy’s sixth location in Union Square in March 2010, Eva has been able to really transition the brand to focus on its dining. Eva has introduced over ten new menu items, exclusive to this location, including her own recipe of the Pan Fried Red Fish and other southern favorites like BBQ’d Salmon and BBQ Meatloaf.
Eva has been featured on FOX5 and CW11 television programs; Every Day with Rachel Ray Magazine; and been selected to cook at Macy’s Culinary Council.
