Chef Maria Germania Diaz, born in the Dominican Republic, infuses the kitchen at Conrad San Juan Condado Plaza with the things that she learned from her mother, her aunt and her grandmother - a trio of women she calls "the best chefs in the world".
"I think that all of us chefs have different styles. However, cooking is like fashion, and menus and recipes are renewed according to the current trends," says Diaz, who integrates ingredients like soy sauce, sesame seed, potatoes, basil and rosewater into traditional Puerto Rican dishes.
Chef Maria Germania has been cooking since she was nine, but entered the hotel culinary world in 1989, and her presence has not gone unnoticed. For the past few years, she has sharpened her knife against those of some of the world's most respected cooks who have gathered at many cooking events such as Saborea Puerto Rico, an event that showcases many of the dishes that have positioned Puerto Rico as a world class gastronomic destination.
