Home Run Retreat (Cooperstown, N.Y.)

Nestled between the Catskills and home to the National Baseball Hall of Fame, Cooperstown is awash in golden and amber hues of fall foliage. The 103-year-old Otesaga Resort Hotel on Lake Otsego has two restaurants that create meals using local ingredients. Visitors can go apple- and pumpkin-picking at the Middlefield Orchard, enjoy harvest festivals at The Farmers' Museum, and sip on fall beers at Brewery Ommegang, which is the only Belgian-style brewery in the U.S. (Interesting fact: Cooperstown was once the hops capital of the U.S.).

Lompoc & 10 Barrel Beer Dinner (Bend/Powell Butte, Ore.)

Beer connoisseurs can raise a pint or two at Brasada Ranch's Lompoc & 10 Barrel Beer Dinner on Oct. 27. Brewmasters Bryan Keilty of Lompoc Brewing and Tonya Cornett of 10 Barrel Brewing Company, craft breweries in Bend and Portland, respectively, are pairing their Oregon beers with a four-course meal prepared by Brasada Ranch's chef Adrian Carpenter. The $65-dinner at Range Restaurant and Bar at Brasada Ranch, a member of Preferred Hotels & Resorts, includes albacore tuna ceviche with sweet corn sorbet, pickled chanterelles, and aji panca chile gastrique; baby spinach and duck confit salad with soft-cooked farm eggs, roasted red peppers, black currants, and warm pancetta vinaigrette; wood-fired beef rib-eye with olive oil crushed heirloom potatoes and roasted romanesco with bourbon whole-grain jus; and Juniper Grove goat cheesecake with caramel, hazelnut sandies, and farm-fresh berries.

Wine Walk-by-the Sea (Carmel, Calif.)

A former artist colony originally built in 1905 by California landscape artist Christian Jorgensen as a gift for his wife, the mansion La Playa Carmel was converted into a hotel in 1916 and is now run by Grossman Company Properties and Classic Hotels & Resorts. The resort's Wine Walk-by-the-Sea package includes one-night accommodations, a local wine fireside on the evening of your arrival, two Wine Walk-by-the-Sea passports, and a self-guided stroll to seven wine tasting rooms within walking distance of La Playa Carmel to sample local estate-grown still and sparkling wines.

Fall into Flavor (Southport, Conn.)

About an hour drive from New York City, the white clapboard boutique hotel Delamar Southport offers Fall into Flavor afternoons this fall. The hotel serves hot apple cider and freshly baked cookies or cider donuts, and guests can rent bikes and pedal through manicured lawns, beaches, and fall foliage. At nearby Jones Family Farms, visitors can go apple-picking or attend the farm's first Nutmegger Cheese and Wine Festival, a fundraiser to protect Connecticut's farmland and support childhood nutrition on Sept. 23. The Delamar Southport offers anAutumn Escape package, which includes a two-night stay, a bottle of cabernet from Jones Family Farm vineyards, a charcuterie plate from Artisan, the resort's farm-to-table restaurant, a list of farms in the surrounding area offering apple-picking, pumpkin-picking, and wine tastings, complimentary breakfast, and parking.

Insider Escapes (Charleston, S.C.)

American Express Travel's new Insider Escapes features food and wine itineraries built around Top Chef judge Tom Colicchio's recommendations, including Charleston, S.C. Travelers can enjoy fried seafood platters and Low Country classics at Hank's Seafood; pick pumpkins at Boone Hall Plantation, and visit North America's only tea garden, the Charleston Tea Plantation, and learn how to brew up sweet tea vodka at Firefly Distillery.

Hurricane Free Escape (Aruba)

Located outside the hurricane belt, The Westin Resort & Casino, Aruba's Hurricane Free Escape includes overnight accommodation, daily breakfast for two, and a $74 food and beverage credit, in honor of 74 being the minimum wind speed of a Category 1 hurricane, if it rains for more than three consecutive hours during daylight hours during any day of the trip.

Fall for Vermont (Stowe, Vt.)

The mountain village is known for its fall foliage from early September through late October. Topnotch Resort and Spa offers a Fall for Vermont bed-and-breakfast Special, which includes overnight accommodations, including rooms, suites, and resort homes, American breakfast at Norma's, pre-mapped foliage tours, and a Vermont souvenir.

Nassau Paradise Island (Paradise Island, Bahamas)

Head to the sugar white beaches and crystal clear waters of Nassau Paradise Island for a seafood feast including crawfish, land crabs, grouper, yellowtail, conch, and red snapper. The One&Only Ocean Club's Epicurean Escape package includes daily breakfast, one three-course dinner for two at Dune with wine pairing, a rum tasting session, $100 resort credit, and a culinary keepsake.

Only in Autumn (Boston)

Beacon Hill's Fifteen Beacon features the Only in Autumn package, where guests can see fall foliage and take a private tour of Boston's historic spots, including the North End and Boston Common and Public Gardens. After the tour, visitors are treated to Fifteen Beacon's homemade spiced cider and warm donuts.

Segway into Fall (Bedford, Pa.)

Nestled in the Allegheny Mountains, the Omni Bedford Springs Resort and Spa offers scenes of fall foliage, covered bridges, and campfires. Guests can take Segway tours of the foliage at Red Oak Lake and Naugle's Mill with the Segway into Fall Package, which includes two-nights' accommodation, a guided Segway tour, and a picnic lunch at Red Oak Lake.

Old-Fashioned Fall (Hot Springs, Va.)

Situated between the mountain ridges of Virginia and West Virginia, the historic The Homestead Resort offers a range of outdoor activities, including horseback-riding, golf, archery, hiking, and off-roading. The resort also offers fall hay rides, nighttime campfires with s'mores, and cinnamon donuts for breakfast.

Wine & Chile Fiesta (Santa Fe, N.M.)

See the changing colors of aspen trees while sampling food from 75 restaurants in Santa Fe and wine from 90 national wineries at the 22nd Annual Santa Fe Wine & Chile Fiesta from Sept. 26 to 30. Pair the visit with a stay at the adobo-style La Posada de Santa Fe, which offers a Wine & Chile Fiesta that includes three nights in a deluxe room, one chocolate chile wrap body treatment per person, chocolate and wine gifts, and two tickets to the Fiesta's Grand Food & Wine Tasting.

Olympic Culinary Adventure Route (Olympic Peninsula, Wash.)

Experience the Washington Olympic Coast's farm-to-table cuisine on the Olympic Culinary Adventure Route,a self-guided tour with 30 stops around the Olympic Peninsula, including local farms and farmers' markets, wineries, cideries, bakeries, creameries, and restaurants serving sustainable, local products.

Southwest Idaho Snake River Valley (Caldwell, Idaho)

Southwest Idaho has had a resurgence in winemaking after grapes were replanted in the Snake River Valley. Some 30 wineries with varietals like tempranillo, malbec, syrah, cabernet sauvignon, Merlot, chardonnay, riesling, and viognier are grown in the region. Tasting rooms feature tastes that range in price from free to $8, and Vineyards in Caldwell has a bed-and-breakfast with room rates starting at $169.

Culinary Weeks (Colorado and Idaho)

The Dude Ranchers' Association features food-focused trips with gourmet meals, wine and beer tastings, and cooking lessons At Colorado's Smith Fork Ranch, the Taste of the West culinary weekends include wine tastings, a cooking class, and a five-course meal with organic produce from the farmstead garden and local lamb, game, beef, and fish. At the Red Horse Mountain Ranch in Idaho, Wine Tasting Weeks feature candlelit dining with Pacific Northwest wines.

Pricing: All-inclusive prices range by ranch. Smith Fork Ranch's Taste of the West is $2.650 per couple for three nights; Red Horse Mountain Ranch's Wine Tasting Weeks are $2,600 for two people per week.

The Reefs and Rainforest of Belize (Belize)

When Prince Harry visited Belize in March 2012, he indulged in Hamanasi Resort's Garifuna and Mayan dishes, which include ingredients like cassava, fresh coconut milk, plantains, local cilantro, and fish. New England resort Ocean House in situated in the center of fall foliage. Wine Tour of Niagara (Niagara, N.Y.)

The Embassy Suites Niagara Falls — Fallsview features the Wine Tour of Niagara on the Lake package, which includes two tickets for a Niagara Wine Tour with narrated tours at Pillitteri Estates Winery, Reif Estate Winery, and Inniskillin Estate Winery, plus tasting of three wines at each stop. The package also includes casino, Niagara Falls, and attraction shuttle passes, breakfast, accommodation in a two-room suite, and nightly manager's reception with complimentary snacks and drinks.

Retreat to Romance (Seattle)

Less than five minutes from Seattle-Tacoma International Airport, Cedarbrook Lodge is tucked away on 18 acres of restored wetlands. The Copperleaf Restaurant & Bar's executive chef Mark Bodinet, formerly of The French Laundry in Napa Valley, Calif., uses ingredients from the on-site chef's garden and locally sourced ingredients. The To Dine For package includes overnight accommodations, valet parking, and an $80 dining credit at Copperleaf Restaurant & Bar. The Retreat to Romance package includes overnight accommodations, valet parking, a dozen red roses, and a four-course tasting dinner for two at Copperleaf Restaurant & Bar. The Chocolate — A Girl's Best Friend package includes overnight accommodations, petits fours, truffles, and a bottle of chocolate wine, chef Bodinet's Theo Chocolate Pot for two, and a $50 dining credit to Copperleaf Restaurant & Bar.

Muy Sabrosa (Santa Fe, N.M.)

The Inn on the Alameda has teamed up with the Santa Fe School of Cooking to create the Muy Sabrosa package, which features a two-and-a-half hour cooking class followed by lunch. The package also includes a two-night accommodation, daily buffet breakfast, daily afternoon wine and cheese reception, and a $40 gift certificate to Mucho Gusto, a Mexican café adjacent to the inn.

Culinary Escape to Mexico (San Miquel de Allende, Mexico)

Indulge in executive chef Carlos Hannon's colonial Mexican cuisine at Rosewood San Miguel  and take colonial Mexican cooking classes, which include a trip to the local farm and the chance to cook dinner with chef, with the four-day Culinary Escapes package. Wash it down with Mexico's largest collection of mezcals. The Baytowne Beer Festival Package at Sandestin Golf and Beach Resort includes one free night's stay with the purchase of two, a  complimentary half-hour intro YOLO boarding lesson, and access to the fitness center and tennis courts.

Finger Lakes Wine Tour (Finger Lakes, N.Y.)

Nestled in the Finger Lakes wine region, the 34-room French-style Mirbeau Inn & Spa is offering a Finger Lakes Wine Tour Package, including two-nights' accommodations, a six-hour wine tour, a picnic lunch, one 50-minute spa treatment per person, a three-course dinner, and daily breakfast.

Fall Gastro Getaway (Lake Placid, N.Y.)

The Relais & Chateaux's Lake Placid Lodge is surrounded by the Adirondacks' fall foliage. Hiking, biking, kayaking, sunset rides in the Hackercraft, and s'mores at the lakeside bonfire or in the stone fireplace of each room are just some of the cozy fall activities offered, along with a candle-lit dinner at Artisans restaurant.

From Oct. 25 to 27, Lake Placid Lodge will host its annual Fall Gastro Getaway, during which executive chef Nathan Rich will team up with chef Matthew Delisle of L'ESPALIER in Boston and Dan Stotesbury of Ladera Vineyards to create a special seven-course tasting menu. The event will also include cooking demonstrations, beer and wine tastings, lectures from experts, and mixology classes.

'Fall' in Love (Newport, R.I.)

The Chanler at Cliff Walk is a scenic sanctuary awash in yellows, oranges, and fiery fall reds that is offering a 'Fall' In Love package, which includes two nights' accommodation, daily breakfast, a bottle of Spiced Pear sparkling wine, two tickets to a Newport mansion, a three-course contemporary American meal by executive chef Thomas Duffy at the Spiced Pear restaurant overlooking the Atlantic Ocean, and complimentary transportation to any location in Newport.

Seaside Autumn (Kennebunkport, Maine)

This seaside town dotted with antique stores and art galleries is a fun fall retreat. Yellowstone and Grand Teton National Park Autumn Adventures (Jackson Hole, Wyo.)

Golf with the Pros (La Romana, Dominican Republic)

Connecticut Wine Trail (Niantic, Conn.)

Sip your way along the Connecticut Wine Trail and stay near the vines at the Inn at Harbor Hill Marina, a bed-and-breakfast on the Niantic River. Those seeking an urban fall can book the Fall Frenzy package at Kimpton's The Muse in midtown Manhattan. Capture the Color of Fall (Sedona, Ariz.)
