You Shouldn't Shy Away From Oil When Cooking Salmon

Salmon is a fish that is easy to prepare but hard to cook, but luckily, there are a few easy ways to ensure your salmon comes out perfect.
One such technique to remember is never to skip the oil. Salmon is already full of natural acids and oils, but it does need a little extra to help it cook.
Using enough oil to cook your salmon keeps it from sticking to the pan and retains the fish's flavor while releasing more as it cooks.
If you're worried about over-saturating the fish with fat, there's no need to be. Salmon does not absorb much of the excess oil used to coat a pan.
Dishes like salmon confit poach the salmon in oil, surrounding it in a blanket of warm fat that will steam the inside until it's perfectly soft and tender.
