Yogurt Is The Magic Ingredient For The Fluffiest Pancakes Ever

To make sure your pancakes are fluffed to perfection, you may just need to add a little yogurt. Yogurt is slightly acidic, so it can be substituted for buttermilk.
As the yogurt reacts with the baking soda and carbon dioxide in the batter, you'll start to see bubbles pop up. This will result in fluffier pancakes with a lighter texture.
Yogurt is slightly thicker than buttermilk, so start with a 1:1 substitute, but if the batter is too thick, add water or milk. The batter should be slightly lumpy, not runny.
Plain flavor has the least flavor, but if you want more protein, use Greek yogurt. Vanilla-flavored yogurt adds extra sweetness and pairs well with honey nut granola topping.
