To counteract the added moisture from the ricotta, you'll want to add a few other ingredients, like flour, baking powder, and baking soda.
An 18.25-ounce box of cake mix blends well with about 2 pounds of ricotta, with some sugar, eggs, and vanilla extract for added flavor so the cheese doesn't overpower the cake.
Box cake mixes at the store are now a few ounces less than 18.25 ounces, so you can use a larger amount of the dry ingredients or a smaller amount of ricotta cheese.
Add your cake mix in last. After mixing the ricotta, eggs, sugar, and vanilla until smooth, add the cake mix and incorporate it with the other dry ingredients before baking.
