Most cooks agree that vegetable peelers are a kitchen tool staple, and celebrity chef Ina Garten not only agrees, but has one listed on her necessary kitchen Equipment List. Like any kitchen tool, there's almost no limit to what you can spend, but in the case of a vegetable peeler, there's no reason to spend much at all.
Pro chefs and home cooks alike swear by the Kuhn Rikon Original Swiss Peeler, with Food & Wine describing it as "a long standing favorite in our kitchens." At just $15 for a set of three, the carbon steel blades are sharp but can be prone to rust, so they suggest to "wash and dry your peeler immediately after use, and make sure it's completely dry before stashing it in the drawer."
Even if a low price makes it seem disposable, you can sharpen a peeler, as demonstrated on YouTube by Old's Cool Kevmo. It makes sense, as a peeler is just a few knife blades mounted for a specific task, and nothing can beat an inexpensive peeler that lasts a long time.
