Why You Should Pay Close Attention To Sweet Potato Skin When Shopping

Some produce items can still be eaten with blemishes, but you shouldn't buy sweet potatoes with damaged skin as they can have issues further under the surface.
Potatoes are known as one of the hardiest crops that seemingly take forever to go bad; if stored correctly in a cool pantry, they can sometimes last for literally months on end.
However, sweet potatoes are much more sensitive, generally only lasting around 3-5 weeks. Skin cracking or blemishes are the easiest way to spot one that's started to go bad.
If you have sweet potatoes at home that have developed blemishes, some might still be usable — just don't try to eat them whole like a baked potato.
Scoop out the bruised sections of your tubers and slice up whatever is left. You can use the remaining portions to make sweet potato fries or even a pie.
