Why You Should Pass On The Vegetable Oil When Baking Boxed

Boxed cake mixes have come a long way, making baking easy and convenient. However, even the best store-bought mixes are no match for the taste and texture of a homemade cake.
Many boxed cake mixes call for mixing pre-packaged, blended, dry ingredients with water, vegetable oil, and eggs. This results in an adequate cake that’s a bit lacking in flavor.
Vegetable oil is highly processed to be flavorless and odorless. For a homemade taste, simply opt for other more flavorful fats, such as melted butter, coconut oil, or olive oil.
When subbing out butter or oil for your boxed cake mix, it's important to choose the right fat for the flavor of your cake. Melted or liquid fats can usually be swapped out 1:1.
Melt solid fats in a microwave-safe bowl or in a saucepan over low heat. Let them cool slightly to avoid cooking the eggs, and make sure the eggs and dairy are at room temperature.
