Why You Need To Try Mozzarella Sticks With Melba Sauce

It’s common to pair mozzarella sticks with marinara sauce, but trying them with melba sauce might just be your new favorite thing. This strange and delicious combination started as a chef's invention in Virginia more than 30 years ago, who then migrated to Albany, New York, and introduced it to locals.
The pairing of fruit and cheese isn't so obscure: Think about cheese boards, which often offer pears, grapes, and other fruits alongside cheese options like Brie and cheddar. You can buy melba sauce at the store but the recipe is super simple to make at home if you choose.
In a traditional melba sauce recipe, you simmer whole fresh raspberries with some sugar and red currant jelly for the correct texture and a sweet and tart flavor. You can also make a more straightforward recipe from Escoffier with raspberries, confectioner's sugar, and lemon juice.
