Why You Need To Be Careful When Making Caramel From Canned Condensed Milk

Although boiling canned condensed milk is an easy way to make dulce de leche, sometimes, the can will explode, shooting hot, sticky, burnt milk all over your kitchen.
Carnation condensed milk comes with a warning: "Do not boil unopened can as bursting may occur." When the boiling water evaporates, it can cause the can to warp, split, or explode.
To make dulce de leche, fill your pot with plenty of water — at least two inches above the can. Avoid walking away from the can and letting the water evaporate.
Boiling canned condensed milk is simple, and it's tempting to set it and forget it. Set a timer at regular intervals to check on your pot and refill it with water as necessary.
After boiling your condensed milk for a few hours, don't open the can right away. The pressure built up within the can could be released all at once, along with its contents.
