Choosing the right bakeware is essential for achieving a perfect cake. Although glass cake pans are common, the material is surprisingly not the best decision.
A cake baked in a glass pan will be more heavily browned on the outside, making it drier and crustier. In many cases, your cake might be undercooked in the center.
Glass pans react with and distribute heat in a way that prevents a cake from baking evenly. This also occurs with oven-safe glass pans that can withstand high oven temperatures.
The material heats up slowly and holds onto heat longer, which can lead to a collapsed cake. When removed from the oven, the cake continues to cook and brown instead of cooling.
However, glass works better with acidic ingredients since metal and acid react and develop a metallic taste. Opt for a glass pan when baking pineapple upside-down or citrus cakes.
