There are many ways to ensure your grilled cheese comes out perfect every time, and for a burst of extra flavor, you should use mayonnaise instead of butter as your spread.
Using mayo in your grilled cheese will help brown the bread evenly, in addition to providing a "touch of tangy-sweet flavor," as chef J. Kenji López-Alt puts it.
Mayo has a higher smoke point than butter, so it can get very hot without burning, and Bon Appetit’s Alison Roman notes it has "the combined browning power of oil and egg yolks."
When choosing a mayo for your grilled cheese, get the most standard jar you can find. Steer clear of low-fat mayo, which has a high water content and can leave your sandwich soggy.
