Why Italians 'Spank' Risotto, According To Giada De Laurentiis
By Kelly Douglas
Giada De Laurentiis is an expert on Italian cooking, from pasta to pizza to lesser-known dishes, and now she's at it again with an unexpected risotto tip.
De Laurentiis has explained that tapping or "spanking" risotto after you plate it can help it look neater on the plate.
Simply plate your risotto, tap the plate’s bottom, right under where the risotto rests, and watch it spread out across the plate, creating a thinner layer instead of a large clump.
Not only will your risotto spread more evenly, but your spatula won’t interfere in the plating process, and you can add vegetables around it for an aesthetically pleasing dinner.
