A charcoal grill is better at adding smokiness to meat than any gas or electric grilling options, and it gets a lot hotter than other grills, creating a fantastic sear.
When cooking with charcoal, stick with natural lump charcoal instead of the familiar charcoal briquettes since it has fewer added chemicals and burns hotter.
Since the lumps from natural lump charcoal come in a variety of sizes that can lead to uneven heating, break all the chunks into smaller pieces of similar size before grilling.
If you want to take charcoal grilling one step further, you can sear the meat straight on the coals to infuse the meat with even more of that desired smoky flavor.
