If you're going to spend your hard-earned money on a New York strip steak, you owe it to yourself to prepare it to the highest standards and prevent a chewy mess.
Barbecue experts often talk about cooking meats "low and slow," but you want to do the exact opposite when it comes to the New York Strip.
This cut has a relatively low level of marbling and will get tough and dry if you cook it too long. Instead, cook strip steaks on a grill or pan cranked up to the highest heat.
You want to quickly get a good sear on all sides before the interior turns tough and gray. Keep the seasoning simple with just some salt and pepper to preserve its robust flavor.
