What's The Difference Between Parmesan and Parmigiano Reggiano?

Before you choose which cheese to finish off your pasta dish, there are some subtle (but significant) differences between Parmesan and Parmigiano Reggiano to be aware of.
Parmigiano Reggiano is made from raw cow's milk, which is then aged for at least 12 months, and sometimes as long as three years.
Parmesan can be made from various types of cow's milk, including whole and skim, and is often aged 6 to 12 months.
Parmigiano Reggiano is a Protected Designation of Origin cheese, meaning that it can only be produced in certain regions of Italy. Parmesan can be produced anywhere worldwide.
Both kinds of cheese can be used in similar ways, but Parmigiano Reggiano is considered higher quality and more expensive due to its strict production requirements.
Parmesan has a milder flavor than the more robust and complex Parmigiano Reggiano. The latter is worth the extra cost if you want to add authentic Italian flavor.
